Aroma/Color/Taste:  Shui Xian is the bigger leafed tea of the oolongs.  Shui Xians are smooth with a  long after taste, and slightly dry finish coming from the rock mineral.  

This tea was made from Master Zhou’s 100 year old tea trees.  The older the tree the meatier the tea.   With floral notes, this tea is velvety, and thick.  Full bodied.  Its mineral taste turns sweet, nice and smooth, as the mellowness of the aged tree imparts its yin.   It has an earthy aftertaste, more espresso than chocolate.  The nutrients and Qi from one hundred years of the earth’s nourishment will energize and invigorate your Qi.  Spend time with this tea, drink about 6 oz., and you’ll feel your own Qi moving, and generating the tell tale increase in saliva from an old pure tree.

Location:  This is from the inner circle, upper mountain, of Wuyi Mountain in the Zhengyan area.

Brews & Steeping:  Bring the water to a rolling boil.  Wait for the bubbling water to settle.  Pour off the first infusion to open the leaves.  For first drink, infuse for 3 seconds, pour and enjoy.  This tea can make 10-15 infusions.  Increase steep time only slightly longer as you reach the final infusions.  You'll know by the color and taste of the tea, when it has been exhausted.  We recommend using a small thick clay teapot and spring or filtered water.  Fill about 1/3 of your teapot or gaiwan with the leaves.
